How much to feed?

Tell us about yourself: I am a mom of 6 life forces - 2 kids and 3 dogs 1 hamster. I live in Ct. I have trained Ringsport and Agility and have 2 DS, one 15 and 7 and a Basset Hound Cookie who is 2

Im trying to feed Olaf raw/domestic food. Firts 2 days i gave him quality kible, he didnt really like that, and would leave cca half a fist of food each meal (i feed 2X a day). He was pretty skinny when he came, and he even got skinnier here.
Here is what he has been eating last 2 days (is that enough food for him?):

yesterday evening

(to get the feeling about the size, the pinky thing in the middle is chicken neck)

4-5 chicken necks
1-2 handfulls of chicken stomachs
2 slices (dark red stuff) of bovine heart
1 slice of bovine kidney
cca spoon of olive oil
brown thing is leftovers from morning meal (cooked chicken, rice, veggies)

Today morning
2-3 handfulls of chicken stomachs
3-4 chicken necks
1 whole egg raw

Today evening
4-5 chicken necks
1 can tuna cca 180g
cca one small human portion pasta with sauce

Is that too much chicken necks?

Btw, according to picture on the first page, he is number 3 :(
